1. Tableau Public by default only shows the worksheet you upload the whole workbook from.
To show other pages in tabs on top of the sheets, you need to click on by the Title of your workbook, and check the box at the bottom so the tabs will appear as below.

2. Per below message, I was required to extract the Google datasheet at the point of publishing to associate as the Data Source in my workbook.
